The best way to sample southern Louisiana cuisine is at an old time boucherie. This long tradition, which began as a way to survive the winter months with plenty of meat, continues as a community celebration that begins early in the morning with the butchering of the hog. The meat is then prepared for dishes such as boudin, boudin rouge, cracklin, backbone stew, and ponce. Nothing goes to waste even the bones are used to make hogshead cheese. Taste it all at Lakeview Park & Beach every Lundi Gras, the Monday before Fat Tuesday. Also hear live music in the barn, and practice your Cajun two-step with the locals.
