Pork

Pork is known as the "preferred meat" in the Atchafalaya National Heritage Area.
A "cochon de lait" is a suckling pig roast.
A "boucherie" is a communal buthering event where each part of the pig and processed and used in various foodways such as boudin and cracklins.
